  • Crunchy Sushi Roll

    1 - Prepare a small batch of tempura and reserve.  2 - Make an inside-out California Roll. 3 - Smear crushed, crunchy tempura batter all over rice roll and wrap with plastic.

  • Udon Noodles with Chicken, Shellfish, and Vegetables

    1 - Bring large pot water to boil over high heat. Have ready large bowl ice water. Add carrots, snow peas, cabbage, and spinach to boiling water and blanch until crisp-tender, about 30 seconds. Using slotted spoon, transfer vegetables to ice water to stop cooking (reserve boiling water), then transfer to colander to drain. Set aside.

  • Black Cod Sake Kasu

    1 - Place black cod pieces skin side down in a shallow dish. Sprinkle a generous layer of salt over the fish, cover with plastic wrap and refrigerate for 24 hours.  2 - Rinse the salt from the fish and pat dry, then return the fish to the cleaned dish.

  • Salmon and miso noodle soup

    1 - To make the broth, bring the water to the boil, then add the dashi powder, mirin, soy sauce and mushrooms and simmer for five minutes. 2 - In a small bowl, mix a ladleful of the hot broth with the miso paste, then pour back into the soup, whisking well.
